our PHILOSOPHY

Omg Alchemy is a product and brewing company with a focus on health. We believe the body is a temple and the food we eat is a sacrament. We aspire to create sustainable products that nourish the body and spirit. We have a line of products that are all plant based. Our mushroom products are created using wild foraged and locally sourced vendors.    

We believe the foundation for health is cooking, and the foundation for cooking is water. All of our products are made using exclusively living spring water collected fresh in the mountains of North Carolina. We believe this is some of the best water available on earth and the main reason so many breweries are moving to this region of the country. All of our products begin by using spring water to extract the medicinal compounds available in the mushrooms we use. Lions Mane (Hericium erinaceus), Shiitake (Lentinula edodes), Maitake (Grifola frondosa), Oyster mushroom (Pleurotus)Turkey Tail (Trametes versicolor), and Reishi (Ganoderma tsugae)

We ferment. We think fermentation is an ancient technology the can be leveraged to create amazing new medicines. We use fermentation to unlock compounds in the mushrooms fruiting bodies. By decocting the mushrooms using high heat under pressure we achieve the extraction medicinal polysaccharides. The resulting water based extract is then fermented which makes the extract more bio available , and release compounds only present after fermentation.

We waste nothing. After we use water to extract as much of the spirit of the mushroom as possible, we then marinate the fruiting bodies and dehydrate them to create the most healthy jerkies on earth.

We keep it simple. We use minimal ingredients to create our products. Our Lions Mane Ginger Tonic is made using only spring water, Lions Mane, Ginger, and sun dried Ecuadorian cane sugar to feed the culture. The process starts by decocting the Lions Mane mushroom. We boil the mushrooms at a very high temperature under pressure. This process called decoction extracts the medicinal polysaccharides contained within the mushrooms fruiting bodies. High temperature and pressure are needed to break the chitin (cellular walls) of the mushroom. We then take this decoction and ferment it. For the Lions Mane Ginger Tonic we use a ginger culture to further extract compounds and make them more bio available. Fresh ginger has a naturally occurring culture on its skin called Lactobacillus which the ginger uses as a bio chemical defense to fend off insect attacks. By freshly grating ginger and adding it to the Lions Mane decoction, it begins to naturally ferment with sugar. We ferment the decoction for over 1 week adding fresh ginger and sugar each daily. This is a very labor intensive process which is well worths the result. most of the sugar will be converted to lactobacillus. We then bottle condition which naturally carbonates the beverage. The result is a super probiotic highly medicinal healthy drink. This drink is basically a natural energy drink that boost cognitive function.
